Happy Friday! Do you know those days where you are just craving something sweet but you also had a hell of a day? Yep. That’s how this drink was born, friends! It’s been the kind of week that deserves a sweet reward. Craving ice cream, but also seeking to unwind, I decided to whip up the perfect, nostalgic beverage that brings me back to childhood trips to diners—well, with an adult twist. This cocktail recipe is perfect for a sweet craving, girl’s night in, or a “cheat day.”
Can I just tell you how much I love dessert cocktail recipes? I think they are by far my greatest guilty pleasure. There’s a hidden happiness in things like spiked milkshakes or those adult Capri Suns everyone is talking about. There’s some odd correlation between sipping a cute, innocent cocktail with sneaking candy into a movie theater or getting away with using your 5-year-old student ID for a discount to your favorite museum. It’s just like a sweet win that makes you do a happy dance.
I must warn you before you test the deliciousness on it’s own, this recipe serves two and packs a lot of punch! I’m finally excited to put the bartending kit I bought Brian for the holidays to good use—I had shared my favorite recipes in the past, but this is my first foray in making my own.
So here’s the delicious cocktail recipe…
- 1 shot bourbon
- 1 shot dark rum
- 2 scoops of vanilla caramel ice cream
- 1/2 teaspoon of ground cinnamon
- 2 teaspoons of sweetened cacao nibs
- Add the bourbon, rum, ice cream and cinnamon into a shaker
- Shake for 10 seconds
- strain the drink into two chilled coupes
- Garnish with one teaspoon of cacao nibs each
