Tasting the Twisted Mango Diet Coke (+Coconut Tofu Salad Recipe!)

Sweet, tangy, and definitely irresistible ā€“ the newest Diet CokeĀ® flavors have taken over my refrigerator. Diet CokeĀ® is always making fun, new ways to reach their customers. I remember the ā€œEnjoy a Coke Withā€¦ā€ campaign that made for many of my former Instagram selfies. The newest line of fruity flavors include Zesty Blood Orange, Ginger Lime, Feisty Cherry, and last but not least: Twisted Mango. I had the opportunity to try the Diet CokeĀ® Twisted Mango flavor and it reminds me so much of home! I’m a fan of new beginnings and fresh flavors, so I loved taking a break from my typical beverage routine with the all-new, flavor-filled lineup.

Whenever I recall my hometown of Miami, Iā€™m reminded of sandy beaches and tropical flavors. When I visited Kroger to pick up my Diet CokeĀ® Twisted Mango, I was instantly transported to my beach days once I opened the can. The bold and fresh flavors were nostalgic! I thought back to my old coworker who used to bring my office mangos from the tree in his yard. Growing up in South Florida gives you such an appreciation for the sweet elements of lifeā€”from ocean air to fruity drinks.

Since Diet CokeĀ® Twisted Mango brought me right back to my roots, I wanted to create a dinner that would be the perfect match for its delicious fruity flavor. Inspired by Floridaā€™s tropical ingredients, I put together a coconut-crusted tofu salad I was pretty darn proud of! Check out these simple ingredients and instructions:

Ingredients:

  • 4 ounces of extra-firm tofu
  • 1ā„2 Tbs grapeseed oil
  • 1ā„2 Tbs sesame oil
  • 1ā„4 Tbs tamari
  • Ā¼ agave
  • 2 Tbs raw coconut flakes
  • Spring Mix Lettuce
  • 1 Mango
  • 1 Kiwi
  • 2 Tbs sliced almonds

Recipe

Cut tofu into 1/2 inch cubes.

In a large skillet over medium heat, sautƩ the tofu in the grapeseed oil and sesame oil for 5 or until lightly browned on each side.

Add 1/2 tablespoon of tamari and 1/4 tablespoon of agave to skillet.Ā 

Add remaining ingredients except for coconut and cook for an additional minute on low heat, stirring gently until tofu is completely covered. Remove from heat.

Gently toss with coconut.

Slice mango into thin strips.

Chop up kiwi.

Toss almonds, kiwi, and mango into a bowl with spring mix.

Top off theĀ salad with coconut-crusted tofu.
